● 1/4 cup vegetable oil
● Two onions thinly sliced
● Two diced tomatoes
● 2 tbsp. garlic paste
● 1 tbsp. ginger paste
● 2 tsp. coriander powder
● 1 tsp. Cumin powder
● 1/2 tsp. Turmeric powder
● 1/2 tsp. red chili powder
● 2 tsp. Garam masala powder
● 1 kg chicken pieces without skin
● 1 1/2 cups hot water
● Freshly chopped coriander
● Salt to taste
Steps to Make Curry Chicken Recipe
Heat the oil in a skillet/ kadhai over medium heat and fry the onions until they turn golden brown. Remove from the oil and keep it aside to cool down a bit.
Now Grind the onions into a smooth paste. Remove to a bowl and set aside. (you can skip grinding onions if you prefer your curry to be chunky)
Transfer the onion paste back into the skillet, add the ginger garlic paste and saute it for 5 min or until the raw smell disappears.
Add the diced tomatoes and cook it till the tomatoes turn mushy. (you can grind the tomatoes to a fine puree as well)
Next, add all the spices, including red chili powder, turmeric powder, garam masala powder, cumin, coriander powder, and salt.
Fry the masala properly until the oil begins to get separated.
Once the masala is ready, add chicken to it and cook for about 8 minutes.
Add 1 1/2 cups of hot water to the chicken, simmer, and cover. Cook until the chicken is tender, about 15 minutes.
