When the talk is about Mexican cuisine, we can’t miss chicken quesadilla. This popular Mexican dish features corn tortillas filled with chicken, cheese, and vegetables. The tortillas are then cut and served with sour cream and guacamole. Chicken quesadillas are a simple and easy food staple to serve at parties, lunch, or even a BBQ event. Chicken Quesadilla Recipe

This recipe features savory chicken cooked with veggies and mixed with luscious cheeses. Serve the quesadillas as a whole or cut them into wedges and accompany them with salsa and sour cream.

Ingredients:

4 cups chicken breasts (skinless and boneless)

1 sliced red onion

2 sliced green onions

3 Tbsp. olive oil

4 corn or flour tortillas

2 sliced mixed bell peppers

1 1/2 cup shredded cheddar cheese

1/2 Tsp. cumin powder

1 cup Monterey jack cheese (shredded)

3/4 Tsp. dried oregano 

1/4 Tsp. chili flakes

Kosher salt and black pepper

Sour cream and salsa for serving

Method

Begin making this chicken quesadilla recipe by heating two tablespoons of oil in a frying pan. Add onion and sauté them. Now stir in peppers and season with salt. Cook until soft. Season with pepper, mix well and transfer to a bowl.

Now heat the remaining oil. Chop the chicken breast in strips, take it in a dish and season with spices and toss well. Now cook chicken in the oil for 7-8 minutes or until golden. Transfer the cooked chicken to a tray. 

Toast a tortilla in the cooking or frying pan. Top it with the cheeses and then with chicken mixture. Now top the chicken with the veggie mixture. Garnish with green onions and put additional spices if required. Fold the tortilla and cook from the sides until golden. Repeat the steps with the rest of the tortillas. Cut the tortillas and serve with salsa and sour cream. 

Important Notes

  • You can take steak instead of chicken breasts. Also, add a tablespoon or two of bacon bits to keep things interesting.
  • Instead of seasonings mentioned in the recipe, toss the chicken strips with Italian seasoning or fajita seasoning. Make sure to add a little garlic powder for a spicy and pungent flavor.
  • Cook the chicken until is not pinky from the middle. Use a thermometer to ensure it is cooked at the right temperature.
  • For the traditional chicken quesadilla recipe, use the Mexican cheese Oaxaca and corn tortillas. 
  • You can also bake quesadillas in the oven instead of roasting them in the skillet. Preheat the oven to about 175 degrees and then bake the quesadilla for some 8-10 minutes or until cheeses are melted. 
  • Feel free to marinate the chicken by putting it in a plastic bag with oil and spices. Also, add some lime juice and let the chicken rest for half an hour. 
  • Add a chopped avocado for a better flavor. Use a mix of colorful bell peppers to make the dish colorful.
  • If you are using chicken thighs, make sure to cook them in a slow cooker.

Variation

Cream cheese lovers can make a creamy and cheesy chicken quesadilla. For this recipe, use cream cheese, and shredded cheddar cheese.

2 cups shredded chicken strips

1 cup shredded cheddar cheese

4 oz. cream cheese

1/2 Tsp. chili powder

1/4 Tsp. garlic powder

1/2 Tsp. onion powder

3 Tsp. lemon juice

1/4 Tsp. cumin

Tortillas

Method

Combine the chicken with all the ingredients except for tortillas. Place a tortilla in a pan over medium heat and top with chicken mixture. Fold the tortilla and cook it until golden brown from both sides.
