1 medium sliced onion

1 tablespoon of butter

1 large head of cauliflower, peeled and cut into bite-size pieces

a quarter cup of Frank’s Red Hot Sauce

2 cups low-sodium stock

2 cups milk (any kind) I used cashews that had been sweetened.

3 medium carrots, peeled and sliced

a quarter cup of Frank’s Red Hot Sauce

1 teaspoon powdered garlic

1 1/2 cups corn or 14 oz can chickpeas, washed and drained (fresh or frozen)

Blue cheese crumbles as a finishing touch

Green onion

Instructions

Preheat a medium-sized pot over medium heat, swirling the butter to coat the bottom. Cook, stirring periodically, for 3 minutes after adding the onion. Cook for 3 minutes, stirring regularly, after adding the cauliflower and carrots.

Stir in the stock and milk, cover, and bring to a boil. Cook for 10-12 minutes, or until veggies are knife tender, on low-medium heat.

Remove the pan from the heat and stir in the spicy sauce and garlic powder. Puree with an immersion blender until smooth.

Stir in chickpeas or corn. Serve immediately with blue cheese crumbles and green onion on top.
