Vegetables are always the main ingredients for a healthy soup Cauliflower is one of them.

Cauliflower is a very healthy vegetable that you can have as it is or include in various recipes to bring out the best from these vegetables. Here we have for you a healthy cauliflower soup recipe that not only tastes great but is also healthy.

Followings are the ingredients to make Healthy Cauliflower Soup

1-150gms of chopped cauliflower florets (you can use frozen or fresh)

2-1 small onion chopped finely, 1 large carrot grated, 2 big potatoes cut into cubes, 3 pods of garlic roasted and crushed along with some coriander leaves. If you are using store-bought readymade ingredients then just add 1 tsp of garlic powder instead of roasting them yourself. You can use any other veggies too like broccoli, green peas etc just that it will have to be boiled beforehand.

3- 1 tsp of chilli flakes or to taste, 1/2 tbsp of red chilli powder, 100 gms of cheese grated. Use any variety of cheese you prefer.

4-50gms butter

5-1/2 cup milk

6-Salt and pepper to taste

Procedure to make Healthy Cauliflower Soup:

There are many ways to cook a Healthy Cauliflower Soup, here we have one simple recipe with easy steps and Good taste at the end.

-Here we start with a saucepan after lightning the stove.

-Melt the butter in a saucepan and add all the chopped veggies along with some salt, pepper and garlic powder if using instead of roasted garlic cloves.   Saute for about 5 minutes on medium heat till they are cooked but not mushy. Add water just so that it covers the veggies completely. Bring this to a boil then lower the heat cover partially, let it simmer for 10 min or until the veggies are cooked.

-Allow it to cool down then transfer this into a blender along with milk, cheese and chilli flakes. Blend till smooth and creamy. If you want a thick soup use more cheese and less milk, for a thin soup-like ours use more milk and less cheese. You can always adjust these quantities as per your taste preferences too.

-Pour this back into the saucepan over low heat gradually stirring it at the same time, bring to a boil and switch off immediately (this is very important else the soup will curdle). Have it hot and fresh garnished with bread crumbs or chives or coriander leaves etc if desired along with some freshly grounded black pepper. You can also have it plain.
