So, in the quest for the wife to finally come home from work and eat more veggies, and to get husband again to stop asking how to make good vegetable soup, made up this very Best Vegetable Soup recipe. I’m not even kidding when saying that it is the best. It really is the best. I mean, just ask my 4-year-old again. And it was no accident whatsoever.

Use Different Vegetables

This soup tastes so much like real homemade soup. The combination of carrots, potatoes, onions, celery, peppers and spices to bring you the true flavors of the classic soups. They are melt in your mouth satisfying and healthy. It’s a well-balanced meal that can be adjusted to feed most people, especially those with allergies or diabetes. If you want to kick things up a notch, consider serving this soup with steamed broccoli.

This soup is best made with carrots, green beans, onions, potatoes, cauliflower, mushrooms, and zucchini. You can use your favorite vegetables or follow one of the soup making principles that I mention below. This soup is delicious served with potatoes grated and slawing on top. Try serving with baked potatoes, or with steamed broccoli. If you are feeling adventurous you can substitute mushrooms for the onions. Cucumbers chopped fine with herbs will give this recipe a fresh taste.

Use A Potato Masher

If you are using potatoes in this vegetable soup recipe, you must use either a potato masher or a piece of equipment that slice and dice potatoes. I prefer using a masher. A masher evenly distributes the potatoes’ natural flavors throughout the potatoes making it easier to puree the ingredients for the cooks. It also prevents the potatoes from sticking together as they cook which will result in a less than perfect soup.

Make Chili Flakes On Your Own

This recipe is best made with green beans, carrots, red chili flakes, potatoes, cauliflower, mushrooms, and zucchini. To make the red chili flakes, you just need to roast a couple of red chilies and slice them into halves. Add them to the slow cooker and cover for about an hour. Uncover at the end and stir fry them with the vegetables until they are soft and colorful.
