Then gather together 2 cups of fine semolina flour, two teaspoons of cinnamon powder, chopped dried rosemary, chopped dried oregano, lemon juice, and yogurt. Slowly mix all the ingredients. Form into two cups ball of dough and place into the oven at 350F for about 25 minutes or until done.

After rolling the pastry, slice the ball in half and cover both halves with the mixture you created earlier. Line the base of your dessert pan with pieces of fresh fruit and place the rolled fruit on top. Bake in the oven for about 25 minutes until the base is set and the middle is set as well. When done, remove the basbousa cake from its baking sheet and cut it down into two pieces; this is now the second middle east dessert you can make.
