Southern Fried Chicken is characterised by a delicious and crispy breading on the outside and a tender and moist core. The recipes you often remember when dreaming of Southern food are cornbread, gumbo, grit and naturally the royal king of all kings – fried chicken. The ingredients you will need are –
1 and a half cups milk
2 large eggs
2 and a half cups all purpose flour
2 tablespoons salt (you will require some more for sprinkling it later)
2 teaspoons black pepper
4 pounds bone-in skin-on chicken pieces
3 cups vegetable oil (or the amount needed for frying)
Steps To Make it
Select all of the ingredients. Preheat the oven to 200 degrees Fahrenheit and set a rack in a big baking pan.
Combine the milk and eggs in a medium mixing bowl. Blend thoroughly with a whisk.
Combine the rice, 2 teaspoons salt, and pepper in a big heavy-duty resealable plastic food storage bag. To mix, seal the bag and shake it vigorously.
Dip the chicken pieces in the milk and egg mixture, allowing extra to drip into a cup. Set aside the already dipped pieces on a plate before you have at least three or four.
Add the dipped chicken pieces to the seasoned flour bag.
Seal the bag and shake vigorously to thoroughly coat the chicken pieces.
Transfer them to a plate and proceed with the remaining chicken pieces.
In a big, heavy pan, heat the oil to 350°F. Place aside a big serving plate lined with paper towels as it heats up.
Fry the chicken in batches for around 10 minutes per side, or until golden brown and fully fried. If you bring too many chicken pieces in at once, even if they match comfortably, the temperature of the oil will drop significantly, impacting the crispness of the finished product. It’s worth noting that chicken breasts can cook faster than dark meat pieces.
With a slotted spoon, transfer the cooked chicken to the paper towel-lined plate to drain. Sprinkle with salt right then.
Move the drained and seasoned chicken to the rack-equipped tray. When frying the next batch, keep it warm in the preheated oven. This recipe would need 3 to 4 batches, depending on the size of your pan.
Tips For Cooking
If you’re going to use something other than vegetable oil, make sure it’s deep-frying safe. Oils with a low smoke point can fire at the appropriate temperature, flooding your kitchen with smoke rather than the appealing scent of fried chicken.
The minimum acceptable temperature for chicken is 165 degrees Fahrenheit.
Leftover fried chicken can be reheated successfully. Remove the chicken from the refrigerator and allow it to come to room temperature. Preheat the oven to 400 degrees Fahrenheit. Place the chicken on a rack above a rimmed baking sheet and bake for 15 to 20 minutes, or until cooked through and crisp.
Few Recipe Variations
Buttermilk may be used in place of milk. Another way of cooking Southern fried chicken includes soaking it in a buttermilk marinade for at least 6 hours. This makes the chicken moist and lets the flour adhere better.
Season the flour with additional seasonings. Cajun seasoning is very popular, as are paprika, cayenne pepper, and poultry seasoning. You can also try the mix used in a KFC chicken recipe.
To make it crisper, add about 1/2 cup small, dry breadcrumbs to the flour mixture.
Southern fried chicken is the kind of finger-licking-good comfort food that everybody enjoys. End up serving it with your favorite homestyle sides and a glass of sweet tea to get a flavor of the South in your mouth.
